RECIPE :: Wild Rice Summer Salad

We had such a relaxing weekend...and it's still so beautiful outside today that we've kinda kept the weekend routine going!  Lazy morning, playing out side, chasing butterflies and robins (yes, we really do that!), picnic for lunch, LOTS of sand (from the sandbox) covering our legs and toes, and a decent amount of time kicked back in the lawn chair.  I really do love days like this.  Most of my chores were done before the kids woke up this morning, so we were able to just hang out and do whatever we wanted to do!

Recipe for you today, Lydia was helping me in the kitchen this morning before we went outside, and we whipped up this summer salad to have for our lunches this week.  Easy (once the wild rice is cooked) a little nutty, chewing and so refreshing for summer!  I love every one of Tosca Reno's recipes that I've tried, and this one didn't fail either!

Wild Rice Summer Salad - Tosca Reno, The Eat-Clean Diet Cookbook
6, one cup servings || 15 mintues assembly, 55 min cook time (rice)

1 cup wild rice or wild rice blend
4 TBs rice vinegar
1 TBs toasted sesame oil
1 clove garlic, passed through a garlic press (i used two small, fresh from the farmers market!)
1 cup cooked boneless, skinless chicken or turkey breast, cubed (we cooked extra chicken on the grill last night!)
1 medium tomato, seeded and diced
1 bunch scallions, trimmed and chopped (also fresh from the farm market!)
1/3 cup cooked edamame
1/2 cup fresh corn kernels, cooked
1/2 tsp tarragon, minced (left this out, for some reason I don't have any! gotta put it on my list!)
1/4 cup fresh basil leaves, chopped
1/2 tsp sea salt (I use Himalayan salt for everything!)
1/2 tsp pepper

1. Cook rice according to package instructions. Set aside to cool.  Wild rice takes about an hour to cook, so it's a great idea to make it up a head of time so you have it throughout the week.  I made a double batch or rice so we can enjoy it with other meals too. If it is going to take an hour (so worth it) then i'm going to make the most of it!
2. In a small bowl, combine rice vinegar, sesame oil and garlic to make the dressing. Whisk.
3. In medium decorative serving bowl, combine cooked rice with remaining ingredients. Toss until veggies, salt, pepper and herbs are well blended.  Pour dressing over salad, mix again and serve.

Shout Out || The Hubby

Quick shout out to my hubby....

Among the many things I love about him, one thing I am blessed with is his support.  I've tried a dozen dfferent business opportunites in the past....from being an online scrapbook company consultant, and starting a business designing scrapbooks for others, and a simple handmade card business, to designing upcycled skirts with Deb and Pretty Stinkin' Green,, and then branching off on my own as another business owner, ATTIC 32, (you'd think I liked crafty stuff or something, lol) and I'm pretty sure there are others I've forgotten about over the past 9 years we've been together....but, you know what?

He's never complained, and he's never said "that's silly, it won't work, you're wasting your time" NEVER.

And, now that I've pushed every one of those things out of my vision for our future, and I've honed in on my own health and fitness, and spending more time with the kiddos, he is once again 100% supportive. One thing that we both like about my business now is that it involves the whole family.  I'm not stuck down in the basement for hours in front of a cutting table and sewing machine....or buried in paper and stickers and photos stressing about the design of a scrapbook page...NOW....I am just living my every day life.  That's what I LOVE about this new passion in my life.  I don't have to invest in anything other than my own health.  Sure, I bought a couple programs to workout to (I was going to do that anyway, and the whole family uses them, even the kids sometimes!) and yes, I have Shakeology® delivered to my door each month (but we ALL use that as well, Dustin has even lost 30 pounds over the past 6 months with that being the ONLY change in his daily routine.  The kids drink it everyday and honestly i think that plays a big part in their over all health, they are never sick!) but other than that, the only investment is my time, and I look forward to checking in with people everyday. I've met some amazing new friends, and I'm meeting new people each day, and have the opportunity to share with them my story.

I am so blessed.

I just got home from a huge Beachbody event in Las Vegas, and while I was there I started really thinking about "us" (my family) and where I see us in 5 years and what I want our life to be like.  I was honestly expecting to come home on fire with ideas for my business and just go crazy and grow....but, instead I feel like my heart is telling me to slow down.  Even though I am fortunate to spend every day with my kids, my focus has been shifted over the last few months, and they aren't getting my attention like they should be.  They deserve more.  My goals were changing and I was starting to want more...more "stars" after my name (rank advancement), more money, more "friends" on facebook, more "likes" on posts, more comments, more recognition, more people on my team.  I was letting Beachbody, and all the comes with it consume me...INSTEAD of putting my heart and soul where it is needed the most.

My relationship with God, Dustin, Davis & Lydia.  My relationships with my friends and team and those in my accountability groups.
Beachbody is still a very big part of my life, and I am still VERY excited to share with others, and give them the best possible experience with the products with my support and accountability groups.  But, you can expect to hear a lot more about these relationships in my life than anything else <3 Because, that my friends is what is most important.

They GROW so FAST!

I can't believe that this picture was already over three years ago!  Look at them, the were SO tiny at only a week old.  This was a rough time in my life...I honestly don't remember a lot of these early days.  Between lack of sleep, and battling with PPD...most of these memories escape me.
So, the few pictures I have are a blessing.
I remember praying over and over again that they would grow up (I know, not what most mothers pray for, we usually want them to stay little forever, right?) Not me...I wanted them to grow up, quickly.  I had a hard time dealing with the never ending crying (both had acid reflux) and constant "busy work".
I feel guilty about feeling that way now....I know I don't need to, but I look back and sometimes wish I could do it over again.  I'd love to be their mom all over again, but in the state of mine I'm in right now!  If only it were that easy.
Davis and Lydia mean the world to me.  I love their individual personalities, sense of humor, silliness, and loving hearts.  Today I sit back and watch them play in the water puddles on top of their sandbox cover, splashing, giggling and playing together perfectly and I am feeling SO blessed that I AM thier MOM <3  Best responsibility EVER.
